Happy Friday! My daughter’s first week of school went great, for both she and I! It’s nice to get the year off to a good start.
This week’s French Fridays with Dorie recipe was an interesting zucchini salad called Minted Zucchini Tagliatelle with Cucumbers and Lemon.
The word “tagliatelle” in the name comes from the fact that the zucchini is sliced into long, thin strips that resemble tagliatelle pasta. The strips of zucchini are tossed with cucumber, sweet onion, lemon zest, and chopped mint. A simple dressing of lemon juice and walnut oil is added, as well as salt and plenty of pepper to taste. The whole thing rests in the refrigerator for 1 – 3 hours to blend the flavors.
I can’t say we loved this one. My husband doesn’t really care for zucchini, so I didn’t expect him to like it. He thought the salad was a little bland. I liked the salad more than he did, but the flavor combination isn’t my favorite. The lemon flavor was a little too predominant for my taste, and while I love mint in desserts with chocolate, I don’t love it in savory recipes.
So, I won’t be making this one again, but if you have a glut of zucchini and are looking for something unique to do with it, give this recipe a try.

This recipe did not go well in our house either. I was not certain how to
cut the zucchini, I really thought tagliatelle was thiner than what I have seen
on the blogs, so I made strips. I guess it really didn’t matter since there wasn’t
any flavor to it. Have a great weekend.
Karen, This one was not a hit in my house either…I knew my husband was not going to eat it so I just made a one zucchini salad. I also found it bland and flat tasting. Love the way your zucchini looks…I cut mine into strips.
