Corn Pancakes

Wow, I’m actually on time for a French Fridays with Dorie post!  This week we made Corn Pancakes.

These pancakes couldn’t be more simple, and they are made with pantry items so they can be whipped up whenever the mood strikes.  Canned corn (drained), 2 eggs, a bit of flour, and some salt are whirled together in a blender to make the batter.  Fry in a hot pan with some oil until golden and you’re done!

Corn Pancakes are meant to be served as a side dish, but they can also be served as an hors d’oeuvre with creme fraiche and caviar.  I served them as a side to Grilled Chicken with Red Peppers and Basil.  Except I forgot the basil.  Oops!

I enjoyed these as a not-usual side dish.  The flavors went well with the chicken and peppers.  I’m not sure how often I will make them, but I recommend Corn Pancakes if you are looking for something a little different.

    That is a nice side for the chicken and peppers. It all looks great. This was
    such a simple recipe to put together I had it done in no time at all. Hubby and
    I really enjoyed this one and will definitely use it again.

  2. Really nice to pair these with the chicken & peppers. I wasn’t quite sold on these, but after seeing everyone’s ideas I feel like I might need to give them another try.

  3. I think it would work out to pair them with things that go well with corn and maple syrup is not one of them… I found that out the hard way… LOL!

    • I was wondering if these would be good with maple syrup…I’m glad I didn’t try it!

      • I used summer crisp corn – which is sweet by nature and with the maple, it was so incredibly sweet. like buttering an ear of corn and rolling it in sugar… it was too weird for me… lol

  4. I like how this contrasts the colorful peppers on your plate. I used fresh corn and liked them. I love when Dorie’s recipe is as simple as this. I’ll make them again.
