Potato Chip Tortilla

While most of the recipes in Dorie Greenspan’s Around My French Table are hits, there are bound to be a few misses.  Unfortunately, this week’s French Fridays with Dorie recipe was a miss with us.

The recipe is called Potato Chip Tortilla.  A traditional Basque tortilla is an egg dish similar to a frittata, usually made with cubed potatoes.  We made Dorie’s take on a traditional tortilla earlier this year.  This week’s recipe replaces the cubed potatoes with crushed potato chips.

This dish didn’t do much for us.  I liked the flavors of the herbs (parsley and thyme) and green onions, but not the texture.  It was a little dry and almost rubbery.  We are used to “eggier” egg dishes.  I could see making this again as a frittata without the potato chips and adding cheese.  Our favorite part of the meal was the bacon served on the side!

I hope the other Doristas liked this better than we did!

    I certainly think some extra seasoning would help – cheese always helps. Always 🙂

  3. I was indifferent to this dish – happy for the quick assignment so close to the holidays – but the results were nothing special. Despite the potato chips, it needed more salt. 😉

  4. I agree with you in that i prefer my egg dishes eggier. This was fun to try but I don’t think I’d make it again.

    As someone who loves a simple dish of potato and eggs or peppers and
    eggs, I thought this was interesting. I like the simplicity of the prep work,
    and the baking time, but not too impressed with the recipe. That said,
    this is the whole idea of trying new recipes. I have enjoyed every bit
    of cooking with all the Doristas. Incidentally, I did add an additional egg
    to the mixture as I found it too dry.

  7. Sorry you didn’t like this one. I haven’t made it yet, b/c I didn’t feel like eating a bag of chips. Now, creme brulee. Those are calories I can get behind! lol

  8. I’m sorry this wasn’t a hit with you. It may not have been with me either if I hadn’t added some of the leftovers from the frig. Of course, I put cheese in almost anything.

  9. Oh well, we can’t love them all. While I have loved most of Dorie’s recipes, there are a few which I will not be repeating.
